This makes one smaller drink, so adjust accordingly for a larger drink or if you want to make more!
1 fresh peach ripe peach, sliced, and skin sliced off
juice of ½ lime
1 oz peach/mint simple syrup (bring equal parts sugar and water to boil, add peach slice, and some fresh mint, and cool) I usually make 1 cup and put the leftover in the fridge for future cocktails
1 – 2 oz white rum
club soda
fresh mint sprig for garnish
Place in food processor 1 sliced up fresh peach. (I could have been more organized, I only had some slices that I put in the freezer that I got last week from nearby orchard, so they were mostly fresh)

Put all in cocktail shaker with ice with exception of club soda and mint sprig, and shake.

Pour over glass with ice and top with a little club soda. Garnish with mint sprig, lime wedge or additional peach slices !!!!
