Orange you glad I said Banana French Toast ?
I got inspired, and a little excited (yes I need a life) to make this after Rachel made it on Below Deck on Jan 17th episode. I happened to have this banana recipe already in my arsenal, haven’t made it for a awhile though. When Rachel said “Bananas Foster French Toast” I was like duhhhhhh, why did I not think of that ? I do love French Toast ! Because I am not Rachel, that’s why!
This one has a fun little twist because it also has orange in it, which adds some citrussy freshness!
French Toast
(these measurements make 4 slices of French Toast)
4 large of slices of Italian, French bread, brioche or challah, preferably not super fresh.
2 large eggs
1 cup of milk (whole or 2% works best)
½ tsp vanilla
1 tsp sugar
1 T melted butter, and additional pat for skillet
few dashes of cinnamon
Whipped cream (optional)
You might want to turn oven on low and place the slices in the oven to keep warm while you make the bananas.
Whisk all together in large shallow bowl or pan. Pour the melted butter in last and slowly whisk as you’re pouring it in so the eggs don’t cook. Place the bread slices in the mixture and soak for 20 minutes – ½ hour. (if you don’t have time for this – it’s not 100% necessary – 5 minutes will do)
Take bread out of the mixture and put on a plate, letting additional batter run off. Melt a pat of butter in skillet oh high, then turn to medium heat. Put each slice in the skillet, and cook on each side for approx 5 – 7 minutes until golden brown. After you flip them over I like to add some additional melted butter over top as the other side browns. Butter makes it Better !!!
Bananas/Orange ‘Foster’
4 medium sized ripe bananas
1 ½ T butter
3 T brown sugar (divided)
2T thawed orange juice concentrate or orange juice
1 T brandy, whiskey, bourbon or dark rum
1 T water
dash of salt
fresh orange wedges/slices (Cara Cara oranges are awesome if you can get them.) (optional)
Peel bananas and cut all in half and crosswise into 2 pieces.
Heat skillet over medium-high heat. Add butter and swirl to coat. Cook 1 minute. Add bananas and sautee for 1 minute on each side. They will get very soft. Add 1 T brown sugar and carefully stir to coat until it dissolves. Put them in a bowl. Squeeze juice from 2 orange wedges over them.
.Combine 2T brown sugar, OJ concentrate or juice, alcohol, water, and salt in small bowl and stir.
Pour in same skillet bananas were in, stir and simmer for approx 1 minute.
Place French Toast on plate, add bananas on top, and pour the yummy sauce over!
Garnish with fresh orange slices. Add some whipped cream and some more cinnamon ! (optional)
This can be altered to suit! The orange flavor can be left out, the alcohol can be left out. Regular bread can be used if you don’t have anything fancy.
Strawberries and/or blueberries can be added too ! Or mini- chocolate chips or shaved chocolate ! Whipped cream can be replaced with ice cream !
Can be served for breakfast or dessert !!
