Finally another recipe inspo! I was seeing nothing that inspired me to post a recipe for a while!

This inspo is from the Below Deck Med episode on 6/24/24. Chef Jono, who I predict will soon be leaving us, prepared a Gazpacho for the ladies. The primary, Gigi didn’t like the seasonings that he used. He also told the crowd, he just googled a recipe that looked legit. Something I would think a pro would know to not do.

I was researching recipes and there are versions that are a tomato base, or a fruit base. Not sure which he made.

Since it’s summer and fresh fruit is available and extra yummy, I went with the ‘fruity’ version.

I found a recipe and ‘tweaked’ it somewhat to make it my own and not to brag, I thought it turned out pretty good. And so easy! This dish would be great for a summer dinner party or cook-out. It’s very refreshing I promise! You don’t have to follow it exactly, but these ‘ingrediencies’ (sorry had to!) and measurements gave it a really lovely texture and light fruity flavor!

This should make four servings so adjust accordingly if you want more. If you have leftovers, it can certainly be refrigerated for a few days. Of course, it will be even better the next day!

You will need a blender or food processor, and you should make sure all of the fruits are chilled, so it’s ready to eat! If not chill for ½ hour – hour.

1 ½ – 2 cups of cut-up watermelon chunks, seeds removed. Make sure you watermelon is good, sometimes they’re hit or miss. I used on of those small round ‘sugar baby’ melons.

2 ripe peaches, cut into slices andskin removed

1 or 2 mini cukes, cut into slices (reserve slices for garnish if desired)

6 -8 strawberries, more if they’re smaller, tops cut off.

2 – 3 slices of jalapeno pepper (This can be omitted if you do not want kick, but I like kick!)

5 – 6 large fresh basil leaves (plus few extra for garnish if desired) You could replace with mint or parsley.

Juice of ½ lime

2 T sugar or sugar substitute.

1 tsp salt

½ cup to 1 cup cold water. I used ½ and I thought consistency was perfect.

This all can be a lot to place in blender all at once, so I did it in two batches. Blend or process on high speed until smooth. Shouldn’t take too long.

Spoon into pretty bowls or cups and enjoy! So summery and refreshing!!
