Cheesy Bacon Roasted Brussels Sprouts

I was inspired to make these and share the recipe with you all after Dr. Jen’s husband on OC last week, was literally inhaling them, and not paying any attention whatsoever to anything she was saying !! Wonder if they were as good as mine ???

Around 25 – 30 fresh Brussels Sprouts, cleaned and stems trimmed

3 – 4 bacon slices, cooked crispy and crumbled

2 T chopped onion

1 T butter

¼ – ½ cup shredded cheddar or jack cheese, or a blend. Mozzarella would probably work too.

Salt and pepper

Red pepper flakes, if you like some kick (optional)

Honey drizzles, if you want to cut the bitterness. (optional)

Chopped parsley (optional)

CHOP CHOP !!!

Preheat oven to 400 degrees

Boil the brussels in a saucepan for only around 3 – 5 minutes, with just enough water to cover them, just until they’re bright green. Drain.

Boil just until they start to turn bright green

Spray casserole dish with cooking spray or brush a little oil or butter on the bottom.

Place the brussels in the dish with the sliced part down where the stem was cut off. They will caramelize as the roast on this side.

Add salt, pepper. Red pepper, (if using) to taste, and the 1 T butter in the middle. If you want a richer flavor you can add more.

Bake for 10 – 12 minutes. Add the chopped onion, cheese and bacon, and bake for additional 5 minutes!

Here’s another option, if you want to cut the bitterness of brussels sprouts. After they are finished roasting, drizzle few squirts of honey over them !

Perfect appetizer or side dish for your Holiday Dinners ! You may just make a brussels sprout lover out of someone that insists they hate them !!!
