Cheery Cherry Jubilee Crepes

I got inspired to make these after Rachel made strawberry crepes on the Below Deck episode a few weeks ago. This is a recipe I created several years ago, but haven’t made it for a while. It’s a great dessert for the Holidays! Sorry I’m a little late. Would also be perfect for a special Valentine’s dinner !

It’s a fun and easy ‘winter dessert’ when fresh cherries or berries aren’t available, or so great. The cherries can be replaced with any type of berries or fruit -(fresh peaches work great when they are available!)

Crepes

3 large eggs

1 1/3 cup whole milk

¾ cup flour

¾ tsp salt

5 T melted unsalted butter

Combine eggs, milk, flour, salt in a blender or food processor and blend/process for one minute.

Cover and let sit at room temp for one hour.

Whisk in 3 T of the melted butter into the batter.

Heat an 8” inch skillet. Brush with some of the melted butter, turn heat to medium.

Add about 1/4 cup of the batter into the skillet, and tilt and swirl it so it covers the entire bottom.

Let cook in skillet for few minutes. When golden brown, carefully flip with your fingers and a spatula, and cook on other side, then slide onto a plate. Continue until finished, putting piece of foil between each crepe.

Cherries Jubilee Filling

1 15 oz can of sweet pitted cherries

1 T cornstarch

¼ cup sugar

4 T butter

1 – 2 T brandy, plain vodka or berry flavored vodka

dark or milk chocolate shavings, or mini chocolate chips

whipped cream

These are my favorite canned cherries

Drain the cherries over a bowl, and save the juice. Melt butter in a skillet, stir in cornstarch and sugar until smooth. Gradually stir in the cherry juice. The mixture will thicken. When boiling stir in the alcohol, and stir and boil for a few more minutes. Add the cherries and stir for one more minute.

The sauce gets so velvety – how gorg is this???

Take a crepe and add a few Tablespoons of the cherry mixture into each crepe, and fold over.

Add whipped cream, and shaved chocolate or chips !!!!

Variations: the alochol can be left out. Flour should work in place of cornstarch. use heated cherry pie filling as a shortcut in place of the cherry cobbler filling. Add ice cream in place of whipped cream!

For strawberry crepes, I just cut them, add some sugar or honey. Add blueberries too, and/ or peaches!

No Rules !! Make it your own !

Savory filling and meat can be used too. My favorite is a broccoli, zucchini and cheese filling. Email me or comment if you want the deets on it!

Crepes can be filled with almost ANYTHING – even savory ingredients!

The crepes are a little tricky until you get the hang of it. The first few may not be pretty !
